Recipes to Live By – Keto Chocolate Mousse

It’s National Nutrition Month so we wanted to bring you some fun Recipes to Live By! We know that a positive way we can work towards preventing breast cancer is to keep an eye on what we are putting into our bodies. This week we are featuring a Keto Chocolate Mousse, because why not start with dessert right?! I found this recipe after being on a cruise for 10 days and trying to eat as healthy as possible with a buffet of items in front of you 24/7. Keto is short for Ketosis, a metabolic state in which fat provides most of the fuel for the body. It occurs when there is limited access to glucose (blood sugar), which is the preferred fuel source for many cells in the body. Ketosis is most often associated with ketogenic and very low-carb diets.

The thing with Keto is that you have to commit to the process, it takes discipline and smart choices but its totally do-able.

Here is what you need for this recipe

Keto Chocolate Mousse

1 Packet of gelatin
1 Tbsp cold water
2 Tbsp boiling water
1/4 cup of low carb sugar substitute (I use swerve confectioners sugar)
1/4 cup of cocoa powder
1 cup heavy cream
1 Tsp vanilla extract

Instructions:
1. Sprinkle gelatin over cold water. Let stand for 1 minute and add boiling water. Stir and allow to cool slightly while you work the other steps.
2. Stir together sweetener and cocoa powder in a medium bowl. Add whipping cream and vanilla.
3. Beat on medium speed with an electric mixer until thickened. Slowly add the gelatin in and continue to mix until well blended.
4. Spoon into your favorite serving dishes and refrigerate for 2 hours.
5. Enjoy!
